5 Quick n’ Easy Sauces for Cooked Beef

1. Simple but Fancy Salsa Verde

Salsa verde doesn’t require cooking – Simply chop small bunches of parsley, chives and mint into small pieces and mix in a bowl with 1 tsp capers, 2 or 3 tsp finely chopped anchovies, 1 clove crushed garlic, the juice of 1 lemon and 3 tbsp olive oil. Mix well and season to taste. This sauce can also be made in a mixer/blender.

2. Easy Blue Cheese Sauce

Melt 25g of butter in a pan (medium heat) and then stir in 1 tbsp of flour. Slowly add 150ml of milk, stirring constantly until the sauce is smooth. Bring to a simmer and add 50g chopped blue cheese, stir. Cook until the cheese has melted and the sauce has thickened slightly. Season to taste, serve and enjoy!

3. Quick Red Wine Sauce

Pour 250ml of beef stock into a saucepan and reduce by half (i.e. let half of the liquid evaporate). Add125ml red wine, 2 tsp dark brown sugar and 1 tsp balsamic vinegar. Leave to cook for 10 minutes on high, until the sauce has reduced by half again. Season to taste.

4. Almost Too Easy Mustard Sauce

This sauce is ridiculously easy – it only has 2 ingredients, but it tastes fantastic. In a saucepan mix 2 tbsp of dijon mustard with 100g creme fraiche. Heat gently until simmering. Season to taste, serve and savour.

5. Go-To Herb Butter

Mix 4 tbsp butter (room temp), 1 clove garlic, 1 tsp freshly ground black pepper, 1 tsp parsley, 1 and ½ tbsp basil and 1 tbsp oregano with a fork until light and fluffy. Place mixture onto plastic wrap and roll into a log – twist the ends to seal the mixture inside. Store in the freezer, and cut off discs as you need them. This mixture will also taste great with chives, sage, rosemary or tarragon.
